Menu: Week 3

Summary of Last Week:

Meals all happened according to plan - I love when that happens! I ended up spending another $18.43 on a few items I needed from Kroger, water, and on snacks for a get together I am hosting.

Total for last week: $91.32
Total for (2) weeks: $250.13 ($.13 over my food budget goal - but still great!)

Menu: Week 3

Wednesday:
(B) Hard Boiled Eggs, Pineapple, & Coconut Dip
(L) Kids: Sunflower seed butter sandwiches, broccoli with dressing, & apples, Adults: Roasted Red Pepper Soup
(D) Slow Cooker Tortilla Turkey Soup with Homemade Tortillas


Thursday:
(B) Spinach & Cheese Omelettes
(L) Sprouted Whole Wheat Tortillas with Chicken & Avocados,
(D) Fiesta Black Bean Soup


Friday:
(B) Scrambled Eggs & Breakfast Sausage
(L) Fiesta Black Bean Soup
(D) Paleo Pizza


Saturday:
(B) Almond Griddle Cakes
(L) Sprouted Wheat Chicken Quesadillas
(D) Arroz con Pollo (rice will be made separately)


Sunday:
(B) (OPEN)
(L) Cranberry Turkey Breast & Green Beans with Almonds
(D) Italian Sausage with Spaghetti Squash


Monday:
(B) Pumpkin Pie Oatmeal (again, my kids beg)
(L) Hard Boiled Eggs, Cheese, Pears, Celery & Nut Butter
(D) Broccoli Soup


Tuesday:
(B) Pumpkin Pie Oatmeal
(L) Omelette “Muffins”
(D) (Shredded Beef) Taco Tuesday!


Snacks: fuji apples with pumpkin (yes, more pumpkin) cream cheese dip, cantelope, baked cinnamon & coconut sap almonds (yet to try recipe - we will see if they’re kid approved)

I will also be purchasing our turkey this week. Sprouts has free-range turkeys for $1.49/lb. We are doing all of the cooking for Thanksgiving Day, so there is a separate budget for Turkey Day.

Hi Ash - Thank you for reading! :) My recipe for the tortillas is here: http://frugalwellness.blogspot.com/2009/03/whole-wheat-tortillas.html I use sprouted flour when I find it on sale (which I did last week). My goal is to add 3-4 recipes a week from my menu. I like to post pictures of the food I make, so I usually wait until I have the pictures to post. Within in the next week I will be posting the turkey soup, fiesta black bean soup, green beans & almonds, arroz con pollo, and the coconut dip. However, I plan on getting most of our family favorites up as soon as possible. :)
