Zucchini Boats

This is one of my favorite recipes that my sister-in-law shared with me - enjoy!!!


4 large zucchini
1 lb ground turkey
1 medium onion
2 cloves garlic
1/4 cup fresh basil
1/2 tsp oregano
1 large tomato, diced


- Cut zucchini in half length wise. Scoop on middle (seeds/softer part of center) starting at about 1/2" in from the peel. I use a melon baller because it's easy

- Brown meat, onion, garlic, basil and oregano. Once everything is browned throw in tomatoes.

- Bake at 325 degrees for 50-60 minutes until squash is tender

I think this sounds good, but I think you should post pictures. Then I'd be really convinced.
Better yet, just travel up to Peoria and we can make it together!! :)
