Steel Cut Oats in the Crockpot

Whether time or lack of morning ambition keeps you from making a hot breakfast this recipe can help! Steel cut oats are growing in popularity because of their health benefits and celebrity endorsement (I'll stay quiet on that one - for now).

Ingredients:

1 cup dry steel cut oats
4 cups of milk of your choice (I use almond) or water
1 teaspoon of powdered stevia or 2 tablespoons of turbinado sugar
3/4 cup dried fruit
1/4 cup hard nuts (I've tried walnuts and pecans but they get mushy)
Cinnamon to taste

Get creative with the ingredients! I've done blueberries or bananas and added walnuts in the morning, apples and cinnamon, pumpkin pie spice, strawberries-n-cream, and peach.


Directions:


Place oven proof glass bowl in crockpot, and fill the crockpot with water until the water level on the outside of the glass bowl reaches halfway up the bowl.


Place oats, dried fruit, nuts, stevia or sugar in glass bowl.



Add milk of choice or water, put lid on crockpot, and turn on low for 8 hours. Stir in the morning before serving and ENJOY!

Servings: 4 full cups (feeds our adult food eating family of 5)

Cost:

1 cup of steel cut oats (bought on sale 3lbs/$1): $.16
2 cups of almond milk + 2 cups of water (sale $1): $.50
Craisins: $.25
Nuts: $.25
Cinnamon & Stevia: $.05

Total: $1.21

Love this! I have a little girl with several food allergies but she can have oats. We'll use water or hemp milk in place of regular or almond milk and omit the nuts. Thank you!
